1. Charcoal Grills

Ingredients List:

  • Cut of beef filets (1.5 inches thick)
  • Kosher salt and black pepper
  • Avocado oil/olive oil
  • Half stick compound butter
  • 1 tablespoon minced Rosemary 
  • 1 clove Garlic

Cooking Instructions:

For Herbed Butter. 
  1. Gather all the ingredients listed above and pat dry your cooking station and cutting board with paper towels if damp.
  2. Soften compound butter in a microwave-safe bowl for 10-15 seconds.
  3. Add in herbs like thyme and rosemary.
  4. Add 1 clove of minced garlic. 
  5. Lather the herbed butter onto a spoon and refrigerate for 10-15 minutes.
  6. Remove 5 minutes before cooking the mignon steaks. 

    Charcoal Grills 

    1. Fire up your charcoal grill by piling or stacking 2 coals together and leaving it at the highest temperature. 
    2. After 15 minutes, the charcoal should turn to white ash, that’s when your grill is ready to cook the mignon steaks.

    For Filet

    1. Season your steaks with some salt and pepper. 
    2. Rub a dash of olive oil and rest for 30 minutes. 
    3. After 30 minutes, use cooking tongs to place your mignon steaks on the grill grates. 
    4. For medium-rare meat, flip the steaks after grilling for 2 minutes on each side. 
    5. Hold your steak at a 90-degree angle with cooking tongs for 30 seconds. 
    6. Set it back down on the grill for another 3 minutes.
    7. After 3-5 minutes, repeat the same process on the other side. 
    8. Use a meat thermometer to check the internal temperature (135º F) or until the outside of the meat reaches desired doneness.

    4. Remove the steaks when the meat has been covered on the outside with crossed grill marks.
